Bragging about my eggplant

I grew these pretty babies in my backyard!  To make them, I sliced them up and shook a heavy layer of salt on them...thats supposed to draw out the bitterness.  After about an hour's worth of doing other things, I rinsed them.  I coated the pan and each slice in a bit of coconut oil (got real messy, but really smooth hands after!), then sprinkled each side with herbs.  I don't remember exactly what I used, but for sure including garlic, tarragon, and parsley.  Then I broiled them in the oven until they looked like they do in the picture.
