Wild Rice Yam Pancakes

I've been wanting to try more recipes from Brendan Brazier's book, Thrive: The Vegan Nutrition Guide to Optimal Performance in Sports and Life.  I tried his Sweet Green Smoothie (primarily romaine lettuce and honeydew melon) and enjoyed it....but I wanted to move past that.  I wanted to try real food.

I like cooked, hot food.  I look forward to hot meals.  So, enter the Wild Rice Yam Pancake.

Here is my bowl, with a few ingredients...starting with quinoa and sweet potato:


I needed ground sesame seeds.  I had sesame seeds, but not ground.  So I made my own with the mortar and pestle I got from IKEA.  love that place...
et...voila!

I'm not really good at pancake flipping, and I didn't necessarily read the directions for how to make these look pretty.  But...here is the final product:
These were breakfast
And these were dinner!


I was surprised at how tasty the end result was for these pancakes.  Its not a combination or cooking preparation I ever would have thought of on my own.  The mixture of yam, wild rice, and quinoa is a powerhouse. 

Verdict:  Will make again!
